12 Days of Christmas - A Little Breakfast Treat


Now I've accepted the fact I'll definitely be about stone heavier come January, any idea of healthy eating has gone out of the window. So I tried this slightly naughty American pancake recipe from good old BBC Goodfood - if it's got fruit on top it totally cancels out the calories...right?

Ingredients

135g plain flour
1 tsp baking powder
1/2 tsp salt
2 tbsp caster sugar
130ml milk
1 large egg, lightly beaten
2 tbsp butter, plus more for cooking

1. Sieve the flour, baking powder, salt and sugar into a mixing bowl. Then, in a separate bowl, hand whisk together the milk and egg, then add the melted butter.

2. Pour the milk mixture into the flour and beat using a fork until there are no lumps. The batter seems really thick at this point but it's meant to be!

3. Heat a knob of butter in a non-stick pan and, once melted, add a ladle of the mixture. Once it has risen to about 1cm thick and starts to bubble through the top, turn it over. Once golden brown on both sides take it out and repeat as desired! For me this made four large pancakes.

4. Serve with syrup and whatever you wish!
