SKINNY PRAWN CURRY


Say what? I can eat curry that's both tasty and under 300 calories? Thanks to the likes of The Body Coach et al, we all know now that healthy eating needn't be boring and this easy prawn curry is a nutritious, guilt-free alternative if you crave a Friday night fix.



To serve two:
Olive oil
1 onion, finely chopped
2 cloves garlic, crushed
Piece of ginger the size of your thumb, grated
4tsp turmeric
2tsp garam masala
2tsp paprika
2 tins chopped tomatoes
2tbsp brown sugar
400g prawns
Big pinch of salt & pepper
1tbsp low fat greek yogurt

Heat up the oil in a large saucepan, then add the onions, garlic, spices and ginger and fry until the onions are nice and soft.
Then add the chopped tomatoes, sugar, salt and pepper. Let this simmer for a while to allow the liquid to reduce slightly. 
Once thickened up nicely, add the prawns and stir until heated through. Serve in a bowl with a splodge of natural yoghurt on top, and eat with a naan if you fancy more of a treat. Enjoy!
